The funniest spaghetti you'll ever eat...

I got a request to blog my chicken spaghetti recipe, so here it is! I wish I had pictures to blog with it, buuuut I don’t. And of course, what’s a blog post without a story about the stupid things that I do or funny stuff that my friends say?

This is one of my mom’s favorite recipes that I love. It is my go to recipe for whenever I bring a meal over to someone’s house because you can make several batches of it at a time and it freezes well.
 
So the summer before my senior year of college I moved into the apartment complex I was going to be living in my senior year, but not to the same apartment. I sublet a room in a 4 bedroom apartment from my sorority sisters and lived in it by myself. With no TV. But that’s another story for another day.
So despite the fact that tons of people usually stay for the summer in our college town, for some reason no one stayed that summer. My sorority sister, who lived in her apartment 4 floors down, and I were the only 2 Thetas there, a group of about 8-10 Pikes, and a couple large black guys on the basketball team (the fact that they’re large and black will be important later). The 15 or so of us were all really close (still are!) and hung out the whole summer. We took turns cooking dinner as a group and everyone made their “specialty”. B made his mom’s homemade pasta/sauce, L made stuffed chicken, R (who is now L’s husband!) made fried chicken from scratch, and when it was my turn to cook dinner, I made chicken spaghetti.
So I cook all afternoon, make 2 huge batches of chicken spaghetti, salad, garlic bread, etc., and everyone comes up to my apartment for dinner.
So we ate, everyone loved it, and my friend W, a large (like 6 feet 9 inches tall) black man (who was coincidentally also from Dallas the one and ONLY person I knew at UofI when I stepped on campus) sets his plate and fork down (we were all eating standing up around the kitchen), and says

 “Man. This white people spaghetti is good!”

And everyone just kind of goes silent… and I go
“uhhhh, what? White people spaghetti??”

And he says
“Yeah! Black people make spaghetti with red sauce, but this is GOOD!”

And we all DIED laughing. And then I explained to him that yes, white people eat spaghetti with red sauce too, but this is just different.

And from now on, Chicken Spaghetti will forever be known as “White People Spaghetti”

So here you have it, Momma Legally Fabulous’s recipe for  
WHITE PEOPLE SPAGHETTI

3 cups cooked spaghetti
1 1/2 to 2 cups cut up chicken
1/4 cup chopped pimientos
1/2 small onion, chopped
1 can cream of mushroom soup
3/4 cup chicken broth
1/2 t. salt
1 3/4 cup grated cheddar cheese

Mix all ingredients, except cheese, into cooked spaghetti in a 2 quart casserole dish.  Toss ingredients with 2 forks, adding cheese.  Cover and bake at 350 degrees for 45 minutes or until bubbly throughout.

I tend to use more grated cheese than you’re supposed to because I like it really cheesy. I also usually use more chicken than I’m supposed to (especially if I’m making it for big hungry boys as I was in the instance above!).
Oh and a little Cheat/Tip from Momma Legally Fabulous – buy an already cooked rotisserie chicken from the grocery store and pull it off the bone/cut it up to save time on boiling your own chicken breasts! Easy Peasy!

  4. Oh, sounds great. I need to make something for my neighbors that just had a baby and this sounds perfect! Now the hard part will be not making a batch for myself...

  7. Great story...but sorry my dear..you lost me on the can of mushroom soup...
    I refuse to acknowledge any recipe which includes or uses same as a foundation. Learn to make a basic white sauve and add gruyere cheese and mushrooms and this good recipe will instantly become a great recipe.
